The National Tourism Office of Madagascar (ONTM) and Haka Fy Authentic restaurant signed an amendment to their partnership agreement yesterday at ONTM headquarters in Antsahavola. Through this collaboration, both parties commit to strengthening the promotion of Malagasy gastronomic tourism on the international stage.

"This partnership began during 2022-2024, when ONTM supported us in producing a culinary series called Lakozia Mitety Faritra, broadcast on the national channel. We now commit to showcasing Malagasy culinary heritage and, by extension, the Madagascar destination on international markets, by mobilizing our expertise, know-how, professional network and communication channels," declared chef Henintsoa Moretti, founder of Haka Fy Authentic Restaurant, during the ceremony.

Chef Moretti highlighted several ancestral recipes illustrating the richness of the island's regions. "Sea snail paired with ravitoto (pounded cassava leaves) is a typical dish of Sainte-Marie's population. Meanwhile, coconut milk rice prepared with seafood, chicken and lamb is considered a true 'Malagasy paella.' This emblematic dish is particularly honored during wedding ceremonies in Mahajanga and the Comoros. The southern part of the island stands out with a traditional dish combining pumpkin and peanuts," she explained.

Under this agreement, Haka Fy Authentic Restaurant will participate in international events organized by ONTM, including side events highlighting Malagasy terroir and gastronomy. A Happy Hour event themed "Flavors of Madagascar" will be hosted by the restaurant's founder at the Top Resa international tourism salon, scheduled for September 15-17, 2026 in Paris. "We continue our commitment to promoting Malagasy cultural wealth, talents and expertise, true assets of the destination and integral components of its tourism offering," emphasized Danny Barivelo, executive director of ONTM.
